Dry TROPICS™ London releases grapefruit and passionfruit character during fermentation, the kind of aroma you’d normally chase with a big dry hop. Heavier charges can bring out vegetal notes and astringency, lower yields, and reduce yeast viability, making hops hit their workable limit before tropical intensity is at its peak. TROPICS™ builds that intensity from the yeast side, so you reach the desired tropical character without too many hops muddling the profile.
And No Sulfur to Clean Up After
Some thiol strains leave sulfurous off-notes behind. TROPICS™ doesn’t. The enzyme that powers TROPICS™ was precisely tuned using protein engineering so that it only targets the precursor of 3MH and 3MHA (the thiols that drive the tropical profiles that drinkers prefer). And you set the intensity: add TROPICS™ Boost to thiolmaxx™, or co-pitch with your house strain for nuance.
